Nauti-Bites - A word about vitamins and minerals in animal protein

Throughout this cookbook, you’ll notice that animal protein is a primary ingredient in some of the recipes with the highest nutritional value. Pork, veal, beef, poultry contain multiple sources of nutrients and high levels of protein. Some also contain saturated fat, and this accounts for the “other” ingredient that offsets some of the nutrient value. But, what is lost in the addition of saturated fat, however, is gained in B vitamins, and essential minerals such as iron, zinc, selenium, creatine and others.
